Japanese whisky has become extremely difficult to taste properly. The famous bottles are either unavailable or priced out of reach, and most bars pour them without context. You taste eight pours, each chosen to make a specific point: a famous distillery against a small independent one, an aged expression against a young cask, a junmai against a daiginjo from the same brewery — so the differences are things you experience, not things you are told.
